Pineapple Rice

Another quick dinner after work using the extra rice from yesterday.


Ingredients
1 cup rice
Pineapple rice paste from Asian Home Gourmet - half packet
125g prawn, de-shell and de-vein
2 tbsp frozen mixed vegetables
2 slices of pineapple or 1/2 can of pineapple (200g)
2 tsp oil

Method
  1. Heat oil, stir fry prawns until they turn pink.
  2. Add rice and pineapple paste, stir to mix.
  3. Add mixed vegetables and pineapple, stir to mix unitl hot.

Miso Soup with Raddish and Tofu

Made miso soup with raddish and tofu and pan fried saba fish for dinner after work today for Emma and myself.


Ingredients
1/2 Raddish, thinly sliced
1/2 packet of silken tofu, 1cm cube
1 tbsp miso
3 cups water
1/2 tsp dashi powder
1/2 saba fish
1 tsp sake
1 pinch of salt
soya sauce to taste

Method
  1. Boil water with dashi powder.
  2. Add raddish and cook until transparent, about 10mins.
  3. Add tofu.
  4. Mix miso with some dashi soup and add to soup.
  5. Marinate saba fish with sake and a pinch of salt.
  6. Pan fry saba fish skin side first for 5mins or until cooked.
  7. Turn and fry the other side for another minute.
  8. Serve with soya sauce.

Chicken Chop Dinner

Simple dinner tonight - Chicken Chop. 

Ingredients
2 chicken thigh
1/2 tbsp soya sauce
1/2 tbsp chinese wine
1 tsp of sugar
1 carrot, diced
2 slices of bread
1 tsp margarine

Method
  1. Marinate chicken thigh with soya sauce, chinese wine and sugar for an hour. 
  2. Use HappyCall pan to pan fry.  No need to add oil as the chicken skin would provide sufficient oil. 10 mins on each side on medium heat. 
  3. Boil carrot.
  4. Thinly spread margarine on bread and toast for 2 mins or until golden brown.
